Rhubarb is a fruit crop that grows from Rhubarb Seeds after 13 days. Rhubarb seeds can be purchased only from the Oasis, or occasionally from the Traveling Cart.

Rhubarb can be used in the spool of the Sewing Machine to create the dyeable Green Buttoned Vest. 
It can also be used as a red dye in the dye pots, located in Haley's and Emily's house, 2 Willow Lane.

In reality, Rhubarb is a vegetable, as the edible part of the plant is the stalk.
